Brought to you by Rankin (John Salt) and Islington pub, The Pig and Butcher the Smokehouse will be on the site of what is now House. The revamped pub will focus on craft beer and will have 20 on tap at any one time.
Thankfully though the wine won’t be forgotten with the drinks menu also including a list of wines from small family vineyards.
As for the food however it sounds pretty exciting with a regularly changing menu full of dishes focused around the fish and meat that will be smoked on the premises. Rankin says of the food – it will “have a strong BBQ influence using a real wood and charcoal offset smoker, a bespoke robata grill and green eggs.”
On the menu you can expect dishes such as lobster and spring onion frittata, fritto misto with romesco, short-rib Bourguignon, pork mixed grill and peppered ox cheek with cauliflower cheese and gravy. There will also be nightly specials of rib racks and brisket straight out of the smoker and a bar menu that will include a foie gras club sandwich, crab on toast and chicken fried ribs.
